Varietal Notes: Castillo was developed by GENICAFE in 2005 as a replacement for the classic Colombia varietal, showing improved cup quality, resistance to leaf rust and higher yield. Caturra, found in Brazil in 1937, is a dwarf mutant of red Bourbon. It is highly productive with both yellow and red cherries. Typica is a low-yielding plant with high quality fruit and the heirloom varietal from which many industry hybrids and mutations have developed.
Origin: Colombia Huila Excelso E/P coffee comes from small family-owned farms in the growing region of Huila, Colombia. The main harvest is between April to August, and the “mitaca” harvest (also known as the “Fly Crop” or second harvest) is between December and February.
Small coffee producers pick and process their coffee at their own micro-wet mills and then dry their own coffee, often on elevated tables inside solar dryers that provide protection from the rain, or on patios during the dry season.
